Brinjal Over Rice (Gaji Bap 가지밥)

This recipe was taken from a Korean variety show "Three Meals A Day - Season 6" episode 9, where one of the host, Eric Mun, cooked it for lunch.  In the show, Eric mentioned that he learnt of this recipe from Korean celebrity chef, Baek Jong Won.  I have yet to view the video of the original recipe.

INGREDIENTS
  • 2 cups of rice (white or brown are fine)
  • 3 cloves of garlic (peeled and diced)
  • 3 stalks of spring onion (washed clean, diced)
  • 200g lean pork (in the show, pork belly was used)
  • 1 big brinjal (sliced)

INSTRUCTIONS
  • Cut the lean pork into thin slices, marinate with soya sauce, white pepper powder.  Leave it in the fridge
  • Wash, rinse rice, place them into the rice cooker with the usual amount of water for cooking as regular.  Do not cook rice yet.
  • In a wok, heat up about 2 tablespoons of cooking oil
  • Lightly fry diced garlic till fragrance
  • Add in diced spring onion, stir fry for a minute
  • Add in sliced lean pork, fry till pork slices turn white, i.e. just cooked
  • Pour in about 1.5 tablespoons of light soya sauce, mix well with the fried ingredients
  • Throw in sliced brinjal and mixed well.  At this point, the brinjal need not be fully cooked because they will be further cooked in rice cooker
  • Turn off the heat, scoop cooked mixture into the rice cooker.  Lay the mixture on top of the uncooked rice, do not stir the mixture
  • As brinjal may suck up the water in rice cooker, I had added an additional 150ml of water onto the final mixture
  • Set your rice cooker to cook, with the regular rice cooking timing
  • Once the rice is cooker, stir and mix the cooked rice with the cooked ingredients.  Adjust seasoning to your taste.
