Butternut Squash 冬南瓜

Cambridge Dictionary: - it is a type of squash that is typically fat and round at one end, with pale brown skin and orange flesh.

Butternut squash is a winter squash with a mild, slightly nutty flavor. Like all winter squash, butternut squash is a fat- and cholesterol-free, nutrient-dense vegetable, rich in fiber, beta-carotene, vitamin C, folate, niacin and potassium. Properly stored in optimum conditions, butternut squash retains its quality for up to six months.
冬南瓜,也称为油桃果南瓜,奶油瓜,是一种秋冬季节的瓜类。它的外观与一般南瓜不同。其外形有点像葫芦,表皮顺滑,淡褐色,果肉橘橙色,味道香甜带有奶油香。



Selection
A ripe butternut squash is solid and feels heavy for its size. Select butternut squash with a firm, hard rind and a smooth, buttery or beige color. Avoid squash with soft spots, pits, blemishes or mold, or squash with soft rinds, which aren't ripe. Store squash only if it has a stem attached, as stemless squash won't keep well. Use stemless squash immediately.

Whole
Whole butternut squash keeps best in a cool room where the squash won't freeze. For long-term storage, 45 to 50 degrees is ideal. At this temperature, butternut squash retains quality for up to six months. Store the squash on shelves or tables and not on a cold floor. Both colder and warmer temperatures shorten storage time. Larger squash store longer than smaller squash. Avoid storing whole squash in the refrigerator because the humidity causes the squash to deteriorate rapidly.



Cut
Refrigerate cut butternut squash immediately. Wrap the squash securely in plastic wrap, or slide the squash into a resealable plastic bag, then store the squash in your refrigerator's crisper drawer. When securely wrapped, cut butternut squash keeps it quality in the refrigerator up to five days. Don't store cut squash near ripening fruit such as apples or pears, as the release of ethylene gas shortens the storage life of the squash.

Cooked
To store cooked butternut squash, transfer the squash to an airtight container. Store cooked butternut squash in the refrigerator and use it within four to five days. Reheat cooked squash in a saucepan or in your microwave oven.

How to cut a butternut squash


Step 1
The key to cutting a butternut squash is halving the squash into two manageable sections.  Start by cutting off the stem with a large, sharp knife.


Step 2
Turn the squash so the cut end is facing away from you, and insert the tip of your knife straight down into the center of the vegetable, keeping it stable with your free hand. Press the handle of the knife down until you cut through the bottom half.


Step 3
Rotate the squash 180 degrees and insert the knife into the center again, repeating the technique in step 2 to halve the squash.


Step 4
Now the seeds can be removed and the squash prepared as your recipe specifies.

Bacon 熏肉

Streaky Bacon on special price at Fairprice Supermarket
Bacon is preserved meat produced from pork.  Streaky bacon is usually made from pork belly while back bacon is from pork loin.

Streaky bacon has more fats and less meaty than back bacon.  We prefer streaky bacon and usually cooked it in oven to get rid of the fats.

Fairprice supermarket usually sells its house brand Streaky Bacon 200g at S$3.99.  It has about 9~10 slices in each packet.  Recently bought them at a sale price of 2 packets at S$7.15.  我常买职总平价超市自家品牌的熏肉,平日200克卖新币3.99,最近有促销,两包新币7.15。一包大概有9~10片。

As in any preserved food, salt contents may be high and moderate consumption is advised.

Garlic 蒜头





Garlic is one of the most commonly used ingredient in all culinary arts.  It is often used as a flavouring ingredient in recipes or as a condiment.

I often roast young garlic bulbs as a condiment or add butter to make garlic spread.  As for stir fry cooking, I'll use old garlic.  What is the difference?  Old garlic has a stronger aroma, the papery outer skin is often brown colour, and it is usually sold in cloves.

Where to get & How much?
For old garlic, I'll get them from nearby local market or provision shop, which is usually S$? per kg.

I'll get young garlic from supermarkets, for e.g. Fairprice supermarket often sells a bag for S$2.30.  It usually has 10 bulbs in each bag.
